I have saved lots of appetizer recipes over the years and many feature mushrooms. I’d like to share this spicy mushroom one with you. Long ago I was very inspired by the Cher and Winona Ryder movie “Mermaids”. Cher’s mom character always makes hors d’oeuvres instead of regular meals and I really like that idea!
You will need a food processor (I use my immersion blender with chopper attachment), a baking pan, silicone mat, measuring cups and spoons. I used my kitchen scale to weigh the ingredients.
Please ignore the cream cheese in the photos! I realized I didn’t need cream cheese for this one!
Instructions
Clean and pat dry mushrooms.
Twist out the stems. You may need a small knife to get all the stem out. Save the stems for soup or other use.
Place the mushroom caps on a baking sheet with silicone mat. Preheat the oven to 350 degrees.
Place the turkey pepperoni and pepper jack cheese in the food processor. Pulse until ingredients are loosely chopped together.
Mound the meat and cheese mixture into each mushroom cap.
Bake at 350 for 20 minutes.
Garnish each with a banana pepper strip.
Makes approximately 10 – 12 mushrooms for 2 appetizer servings.
Tips: 1. You can use strips of red pepper or pimiento for the garnish. 2. 8 oz. of mushrooms will yield 5 or 6 oz. when the caps are removed.
Nacho mushroom appetizer is a spicy vintage hot dish. Pepper jack cheese and pepperoni add flavor.

- 8 ounces white button or crimini mushrooms
- 0.8 oz. (about ¼ cup) Monterey jack cheese with jalapeños, shredded
- 1 oz. Turkey pepperoni (about 12 rounds)
- 12 Pickled banana pepper strips (I use Mt. Olive Sweet N Hot)

I made this into a meal for 2 with 6 Al Fresco apple maple chicken sausages (3/5 lean). 8 oz. mushroom is 6.3 greens, 1.6 oz. cheese is 1/5 lean, 2 oz. turkey pepperoni is 1/5 lean.
