I love to get coffee with holiday spice or cinnamon dolce. I’m also interested in the health trend of adding butter to coffee. So I thought I would make a coffee at home that would be low cost and very cozy in the colder months.
You will need a small mixing bowl, a spatula or mixer, or blender, trays for freezing, 2 tablespoon scoop
Instructions
Soften the ice cream and the butter. My ice cream was fine for blending after a few hours in the refrigerator.
Add sugars and pumpkin pie spice to the mixing bowl. Start with 1 tsp of the spice mix. Mix well.
Add soft ice cream and soft butter. Mix or blend until thoroughly mixed. Taste test at this point for the amount of spice. I like mine with 2 tsp of spice.
I used baby food freezer containers to freeze the mixture in ¼ cup portions. (If you use an ice cube tray, the portions will be about 2 tbsp.) Alternate: you can freeze the whole recipe in a covered container and use an ice cream scoop or heavy spoon to make your coffee.
Makes about 14 ¼ cup servings.
To make coffee, I put ¼ cup of the cream-butter-spice mixture in a coffee mug, then brew strong coffee and pour over top. Tips: 1. you may prefer ½ cup for a creamier cup; 2. You can make your own mix of your favorite spices: cinnamon, nutmeg, ground ginger, ground cloves, allspice.
Coffee with pumpkin pie spice, cream, and butter make a great holiday and cold weather treat. Experiment with level of spice and strength of coffee for flavor.
