Cheese beer bread with spices is my favorite bread to make. I’ve never been really good with yeast and rising and kneading. The beer interacts with baking powder and gives the bread its leavening. I add cheese, spices, and butter for a delicious bread to go with soup or chili or enjoy on its own.
You will need a large mixing bowl, a large whisk, a sturdy spoon or spatula, measuring spoons and cups, and 1.5 quart loaf pan.
Preheat the oven to 375 degrees.
Grease the loaf pan well. I use spray coconut oil.
Melt the butter.
Add flour, baking powder and salt to a large mixing bowl. Use the whisk to combine well.
Add sugar and spices. Stir well.
Pour in the beer. Stir until blended.
Stir in the grated cheese.
Place the dough into the loaf pan and smooth out. Pour melted butter over the top.
Bake for 40 minutes. Makes 8 servings.
Tips: 1. Use a beer you enjoy and will taste good as a bread. I used a Kolsch style. 2. Experiment with the spices. Caraway seeds, rosemary, bacon bits, herbes de Provence all work with the cheese in the bread. 3. You can add garlic or finely chopped spiced nuts to the butter on top. 4. Extra sharp cheddar will add a different snap to the bread. You could also try an Italian cheese blend or Monterey Jack.

- 3 tbsp sugar
- 12 oz room temperature beer
- 1 cup shredded Cheddar cheese
- 1 tsp Italian spice mix (I use Penzey's Tuscan Sunset)
- 2 tbsp melted butter
