When you are eating low carb, you start missing burgers or other sandwiches. Cloud rolls or revolution rolls make a burger holder out of eggs and light cream cheese. They taste fine and they don’t fall apart! Here are my tips for making carb free bread!
You will need a mixer or egg beater, two glass or metal bowls, measuring cups and spoons, spatula, parchment paper, mini pie pan.
Allow the eggs and cream cheese to come to room temperature.
Heat the oven to 350 degrees.
Place parchment paper on the bottom of the mini pie pan. Use a pencil to trace the bottom of each cup. Cut out with scissors and place the circles in each cup of the pan.
Separate the whites and yolks into two bowls.
Add cream of tartar to the egg whites. Use the mixer to whip the whites until soft peaks form. Set bowl aside.
Add the cream cheese and stevia to the yolks. Use the mixer to beat until well mixed.
Slowly add a small amount of the yolk mixture to the whites. Use the spatula to gently fold the whites over combine. Add the yolk mixture in 2 or 3 more sets, folding after each addition.
Use the spatula to add a small dollop to each cup of the pan. This will help hold the parchment paper down and allow you to reposition the circles. (My parchment paper always has a curl in it, so I put them in curling upwards to make this easier.)
Carefully add the mixture to each cup so that you have 6 even rolls. I use the spatula to place it in the cup, not pour.
Bake for 20 minutes and check. You may need to add 5 more minutes. The rolls should not have any liquid and will be toasty brown on top.
When done, flip the rolls onto a wire cooling rack. The paper should be stuck to each roll.
Makes 3 servings.
Tips: 1. I keep the rolls in the freezer, in layers between parchment paper in a freezer bag. 2. To use, warm up with a toaster oven or microwave. It only takes a little! I actually turn on my toaster oven and put the rolls on top, not inside! 3. You can make these on a cookie sheet lined with parchment paper. I just think it is harder to make nice looking round rolls.
