Banana bread low carb

Banana bread is a favorite comfort food, but I needed it to be low carb. You can enjoy the flavors of banana and walnuts in this low carb banana bread.Low carb banana bread uses Carbquik baking mix and sugar substitute for tasty comfort food classic. Enjoy this treat while counting carbs.

You will need two bowls, 1.5 quart loaf pan, measuring cups and spoons, mixing spatula, knife.banana-bread - 1

Heat the oven to 350 degrees. Grease and flour the loaf pan.

Combine the first 4 ingredients in a large mixing bowl. Stir well. A whisk works well if there are clumps. Make a well in the center.banana-bread - 5

Stir together sugar substitute, coconut oil, and eggs. Pour into well in dry ingredients.banana-bread - 3

Stir until just moistened. If it is too dry, add extra water a tbsp at a time until you are able to stir.banana-bread - 4

Stir in bananas and nuts.banana-bread - 7

Spoon batter into loaf pan. Bake for 50 or 55 minutes. Check it during baking. If the top is getting too brown, lay a piece of aluminum foil on top.

When done, a wooden pick in the center should come out clean. Cool on a wire rack in the pan for 10 minutes. Remove from pan and continue cooling. Banana bread low carb

Low carb banana bread uses Carbquik baking mix and sugar substitute for tasty comfort food classic. Enjoy this treat while counting carbs.

Ingredients

  • 2 cups Carbquik baking mix
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp of spices (mix cinnamon, nutmeg, pumpkin pie spice, etc. I use powdered li hing mui.)
  • 1 cup erythritol
  • ½ cup coconut oil, warmed in microwave
  • 2 eggs
  • 1 cup banana, sliced or mashed
  • 1 cup chopped nuts, walnuts or pecans
  • Baking spray

Notes

1. Baking spray has oil and flour. You can liberally grease the loaf pan, then sprinkle with flour or baking mix. 2. Carbquik has baking powder already added. Be sure to only add baking soda to this recipe.
